The SHEM 80E one tank solution is programmable to deliver hot water when you want it. The SHEM32E controller can be configured to turn on 1-3 times a day based on times and temperatures you configure.
The first slot is factory set to allow the element to switch on between 4:00AM and 6:00AM when the tank temperature drops below 150F, and turns off when the tank reaches 160F. The second slot is turned off, with the turn on and turn off times both set to 10:00AM. The third slot is, again, set from the factory to turn on at 4:00PM when the temperature drops below 140F, and it turns off when the tank temperature reaches 150F, or when the time reaches 7:00PM. All three slots are re-programmable so you can decide when you want hot water. More generous settings guarantee hot water all the time, but might sacrifice potential solar gain.

This chart shows the recharge rate of the SHEM 80E tank. When the "heating" button is pressed, it takes little more than 2 hours to reach the set tank temperature of around 160F.

This graph shows a full day of usage using only the heating element. On the left you have the temperature of the tank, and on the bottom you have the time of the day. The red lines mean that the electric element is heating the tank, green lines mean the tank is sitting idle, and blue lines mean the tank is producing water. Each blue segment signifies 40 gallons of 113°F water (using a mixing valve) drawn off the tank. This means a total of around 120 gallons of 113°F produced in one day using the heating element only. As you can see, around mid day the temperature of the tank drops below 113°, but this only caused around 8-10 gallons of water to be below 113°F. Like mentioned above, the settings can be configured to your schedule.
